Juicy Lemon Salmon with Brown Rice

Ingredients:

- 1 Skinless Salmon Fillet
- 1/2 cup Brown Rice
- 1 lemon
- 1 Cinnamon Stick
- 1 Bay Leaf
- Salt and Pepper
- Dill Weed
- Sumac
- Cilantro

Directions:

Salmon:



1.) Cut Salmon into slices slightly larger than the width of your thumb.
2.) Coat both the tops and bottoms in a thin layer of salt and pepper
3.) Drizzle the tops with the juice of half a lemon or untill all pieces are wet
4.) Sprinkle tops with dill weed and sumac (Use lemon zest if you cant get sumac)
5.) Bake in oven for 10 minutes at 400 degrees
6.) Sprinkle on Cilantro

Brown Rice:



1.) Add rice to pot of lukewarm water, then heat until boiling. Stir as needed
2.) Once Boiling, add half a lemons juice, 1 bay leaf and 1 cinnamon stick (Broken in half).
3.) Reduce heat to simmer and apply tight fitting lid to pot. Do not open lid or stir for 10 minutes.
4.) Remove bay leaf and cinnamon stick, they can be used to garnish.
5.) Drain water, then plate. Sprinkle with salt and cilantro, and place salmon on top.
